Breakfast Sandwiches
Instructions
Preheat oven to 400F.
While the oven is preheating you can prep the eggs. I just do scramble eggs and divide them up into squares that fit the size of my English muffins.
Usually by the time I finish cooking all my eggs, the oven is ready.
I fold my bacon into 1/3 pieces, like an S shape. Place onto a wire rack on top of a flat baking sheet so the grease drips down. Doing it this way will give you crisy bacon. I also cook my sausage patties in the oven with the bacon at the same time. I put a little indent in the middle of the patty before placing it on the wire rack. This will insure that it doesn't have a huge bulge that pops up when cooking. If you can live with it, ignore me LOL.
Bake for 12 minutes, flip everything and bake for 12 more minutes.
While that's baking, slice up your english muffins, I toast mine on setting no. 4 in the toaster. Butter them up after and set aside.
After your bacon and sausage patties are done, let them rest for 5 minutes, so it can be easier to handle.
Layer however you like in your breakfast sandiwch. I usually do from bottom to top: English muffin, egg, cheese, bacon, sausage patty and english muffin.
Wait for everything to cool down before wrapping and freezing. Putting warm or hot food directly into your freezer runs the risk of lowering the freezer's overall temperature, which may begin the defrosting process for other frozen items.
Reheating Instructions
Microwave for 1 minute on 1 side. Then flip and heat for 20 seconds more.
Notes
They can be frozen for up to a month. I reused the bags that the english muffins came in to pack the english muffins back into the freezer.
