Pickled Red Onions
Instructions
On stove top in a pot boil 2 cups distilled white vinegar, 1 cup water & 2 tbsp kosher salt.
While it's boiling thinly slice a red onion and put them in a clean container that's air tight.
Once your pickling liquid has reached a boiling point, make sure all the salt has dissolved and pour the liquid into the container of your sliced red onions.
Wait for it to cool down and shut the container tight and put into fridge for at least two hours before consuming.

Lasts me a while, I like putting it on top of my rice dishes.
